Bibim Guksu | Erica Robbin

Bibim Guksu is a wonderfully spicy, traditional Korean cold dish that's perfect for summer.

Ingredients

    BIBIM GUKSU:

  • 1 cup gochujang (hot pepper paste)
  • 2 tablespoon sugar (to taste)
  • 1 tablespoon vinegar (to taste)
  • 2-3 cloves garlic, finely minced
  • 3 tablespoon sesame oil
  • 1/2 tablespoon toasted sesame seeds, plus extra for garnish
  • 1 cup kimchee
  • 1 cucumber, julienned
  • 1 green onion, sliced
  • 6 serrano peppers or 6 jalapeños, sliced
  • 6 eggs, boiled, sliced
  • 12 cups cooked oriental style nigaud noodle pasta, rinsed in cold water
  • 6 sprigs and leaves of Thai basil for garnish (optional)

Directions

    BIBIM GUKSU:
  1. Mix gochujang, sugar, vinegar, garlic, sesame oil, and sesame seeds to create bibim jang Korean sauce.
  2. Layer 2 cups noodles in each bowl, followed by sauce, kimchee, cucumber, onion, peppers, and egg.
  3. Garnish with remaining sesame seeds and Thai basil.
