I love a grilled cheese with a gooey middle and a crispy outside.
This recipe uses blue cheese on the inside which gives it a yummy flavor. I used Castello Danablu Blue Cheese Extra Creamy.
I also found this lovely gouda/parmesan combination cheese, Vincent A Dutch Masterpiece Where Gouda Cheese Meets Parmesan Flavor which I used on the inside and a bit on the outside for the inside-out for that extra outside crisp.
I was first introduced to this inside out technique based off of Food Wishes Inside-Out Grilled Cheese Sandwich – Ultimate Cheese Sandwich and it has been my go-to for making any grilled cheese sandwich. I find that parmesan makes for the best crisp but the combination gouda and parmesan works great as well.
It pairs great with my Roasted Tomato and Garlic Soup recipe.

Blue Cheese, Gouda, and Parmesan Inside Out Grilled Cheese Sandwich
- 2-4 slices bread, any style
- 2-4 teaspoons butter for bread
- 1/2-3/4 cup crumbled blue cheese
- 1/8 cup – 1/4 cup shredded parmesan and gouda cheese
Blue Cheese, Gouda, and Parmesan Inside Out Grilled Cheese Sandwich
- Start to heat pan over medium heat.
- While heating, butter each outside aspect of bread and place just one of each of the halves in pan.
- Top halves with shredded parmesan and/or combo of gouda/parmesan cheese.
- When butter is just melted on bottom slices, place a top slice on and flip over to raw side.
- Sprinkle parmesan or gouda/parmesan, flip back over and cook each side until crisp and inside is melted.
