I love a light, yet hearty summer sandwich. My sister makes these by toasting the bread which gives it the lovely toasty flavor and a bit of balanced texture amongst the creamy filling and freshness of cucumber.

Cucumber Chive Cream Cheese Sandwich

  • 4 slices soft, white or wheat bread, toasted
  • 4 oz (1/2 package) of cream cheese, room temperature
  • 1 tablespoon chopped fresh chive
  • Salt and pepper to taste
  • Splash tabasco sauce (optional)
  • 1 small cucumber, thinly sliced

Cucumber Chive Cream Cheese Sandwich

  1. Mix together cream cheese, mayonnaise, chive, salt, pepper, and tabasco.
  2. Layer each sandwich with toasted bread slice, cream cheese mix, and cucumber.
  3. Cut sandwiches into tea-sized portions and store wrapped in foil until ready to serve.
