An easy dessert or snack.

You can use any type of fruit, whether apples, varieties of stone fruits, or berries.

Ingredients

    EASY FRUIT CRISP:
  • Fruit, any variety such as apples, stone fruits, berries, diced
  • Oatmeal, I prefer rolled oat variety
  • Butter, optional
  • Brown sugar, optional

Directions

    EASY FRUIT CRISP:
  1. Place all desired fruits into a pan and top with oatmeal, butter, and brown sugar.
  2. 2. Bake in oven at 350 degree (177 C) for about 15-20 minutes, until tender.

    *This crisp is great served with ice cream or whipped cream.

Mandarin Orange and Strawberry Parfait

A perfectly light and balanced dessert.

Ingredients

    STRAWBERRY COMPOTE:

  • 3 cups strawberries, chopped or sliced
  • 1/2 cup granulated sugar
  •  

    HOMEMADE WHIPPED CREAM:

  • 16 oz (1 pt/473 ml) heavy whipping cream
  • 3-6 tablespoon granulated sugar (to taste)
  • Pinch of cream of tartar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon almond extract
  •  

    ADDITIONAL INGREDIENTS:

  • 6 oz (170 grams) vanilla yogurt
  • Two 10 oz jars mandarin oranges, drained

Directions

    STRAWBERRY COMPOTE:
  1. Bring strawberries and sugar to boil.
  2. Cook until just slightly soft, leaving color to remain.
  3. Strain out liquid.
  4. Lightly puree if desired and set aside to cool.

    HOMEMADE WHIPPED CREAM:

  6. Whip cream, sugar, cream of tartar, vanilla, and almond extract together until light and fluffy.
  7.  

    MANDARIN ORANGE AND STRAWBERRY PARFAIT ASSEMBLY:

  8. Fold vanilla yogurt into whipped cream, reserving some of the whipped cream for topping.
  9. Layer parfait by alternating fruits and cream.
  10. Top with whipped cream as desired.

Happy National Whipped Cream Day! I love homemade whipped cream. It’s so easy to make. Between the light, fluffy texture and how you can control the sweetness and add any kind of flavoring you like, it’s a real treat. It’s great for any dessert, can use it as an icing, and makes a delicious addition to coffee. It also goes by the name Chantilly cream or crème Chantilly.

This recipe combines the elements of sweet and tangy from the mandarin oranges and strawberries, as well as the whipping cream and yogurt for a perfectly light and balanced dessert.

Ingredients

    MACADAMIA NUT AND HARVEST PEACH PIE AÇAÍ BOWL:

  • 2 (100 gram) pouches frozen açaí berries, blend according to directions for desired texture using coconut water or coconut milk, fruit juice, milk, or non-dairy product of choice
  • 1 peach, diced, and reserve a couple slices for garnish
  • 1/8 teaspoon pumpkin pie spice
  • 1/4 cup strawberries, sliced
  • 1/4 cup blackberries, whole
  • 1/2 cup yogurt, any kind, any style (I used pineapple)
  • 4 tablespoons rolled oats
  • Drizzle coconut oil
  • 1/2 teaspoon of sweetener of choice such as guaraná syrup, brown sugar, honey, or agave nectar
  • 1/8 cup macadamia nuts, roughly chopped

Directions

    MACADAMIA NUT AND HARVEST PEACH PIE AÇAÍ BOWL:
  1. Spread açaí smoothie mixture in bottom of each bowl.
  2. Combine diced peaches and pumpkin pie spice.
  3. Layer fruits in rows over the top of the açaí mixture.
  4. Top with a dollop of yogurt.
  5. Cook rolled oats in coconut oil and sweetener of choice in pan (cast iron is best) over medium heat for about 1-2 minutes.
  6. Add chopped macadamia nuts to pan and cook a few seconds just until nuts are lightly toasted.
  7. Sprinkle granola nut mixture over top and garnish with peach slices.

Açaí berries grow on the açaí palm and can be frozen and blended together like a smoothie. The açaí bowl is a dish known in Brazil as açaí na tigela which uses these berries along with the layering of other various fruits. Creative options for add-ins are endless. Bananas, berries, tropical, and stone fruits, along with a granola topping, nuts, seeds, or coconut flakes are most popular.

In celebration of National Macadamia Nut Day (September 4th), this recipe includes toasted macadamia nut granola for an extra nutty flavor and crunchy texture. And I combined it with the yummy goodness of homemade fresh peach pie (made with peaches I harvested from the tree).
