Roast Beef Sandwich with Chèvre and Balsamic Onions

Whether you use roast beef sliced fresh from the deli or leftover roast beef from the holidays, this sandwich is filling and satisfying.

With layers of roast beef, goat cheese, horseradish sauce, marinated balsamic onions, and greens, served on an onion roll, it’s a real gourmet delight.

You can use crumbled or sliced from the log chèvre (goat cheese).

The cheese and balsamic onions give the sandwich a tangy flavor. My Balsamic Marinated Onions recipe made with onions, balsamic vinegar, sugar, salt can be found here.

My Creamy Horseradish Sauce can be found here. Which is a mixture of grated horseradish root, sour cream, salt, pepper, and a bit of either lemon juice or mayonnaise.

Ingredients

    Roast Beef Sandwich with Chèvre and Balsamic Onions:
  • 2-4 onion hamburger rolls
  • 1-2 tablespoons creamy horseradish sauce
  • Lettuce, any variety such as spring mix, iceberg, Bibb, romaine, or arugula
  • Chèvre cheese, crumbled or sliced log style
  • Marinated balsamic onions
  • 2-3 slices of sliced roast beef

Directions

    Roast Beef Sandwich with Chèvre and Balsamic Onions:
  1. Spread horseradish sauce over each inside of onion rolls.
  2. Layer remaining sandwich ingredients as desired. I prefer to roll up the deli meat slices, then set the sandwich by gently pressing down once assembled.
