Chicken Pesto, Red Onion, Tomato, and Mayo Sandwich

Here’s a delicious sandwich that is bright and fresh.

You can cook and shred your own chicken or use a pre-cooked rotisserie chicken. When I cook mine, I season with a bit of pepper and salt, but you can leave the spices out and just use the pesto for flavoring.

Lettuce is optional. You can use fresh basil leaves if desired.

I prefer the bread to be toasted in this one, but not toasted is great as well.

Ingredients

    Chicken Pesto, Red Onion, Tomato, and Mayo Sandwich:

  • 4-8 slices bread, any variety, toasted
  • Chicken, cooked and shredded
  • Few tablespoons of pesto sauce
  • Sliced red onion
  • Sliced tomato
  • Mayonnaise
  • Lettuce or basil (optional)

Directions

    Chicken Pesto, Red Onion, Tomato, and Mayo Sandwich:

  1. Spread mayonnaise on the inside slices of bread.
  2. Mix shredded chicken with pesto.
  3. Build layers of sandwich with pesto chicken, onion, and tomato, adding lettuce if desired.

    I think the lettuce and/or basil would make quite a different sandwich experience, for me at least.

      The greens definitely do transform this sandwich! Without them makes a lovely type of classic style chicken salad sandwich. Adding crispy lettuces sort of tempers the onion biting into it and adds more crunch. A small amount of fresh sweet or Thai basil really livens it, enhances the brightness of the pesto, notably lime basil is really good! Though not easy to find, unless you grow your own. A thin layer of spinach, which is what I made for the photos, adds a bit of an earthy flavor that’s tasty as well. So many delicious variations!
