Here’s a delicious sandwich that is bright and fresh.
You can cook and shred your own chicken or use a pre-cooked rotisserie chicken. When I cook mine, I season with a bit of pepper and salt, but you can leave the spices out and just use the pesto for flavoring.
Lettuce is optional. You can use fresh basil leaves if desired.
I prefer the bread to be toasted in this one, but not toasted is great as well.

Ingredients
- 4-8 slices bread, any variety, toasted
- Chicken, cooked and shredded
- Few tablespoons of pesto sauce
- Sliced red onion
- Sliced tomato
- Mayonnaise
- Lettuce or basil (optional)

Directions
- Spread mayonnaise on the inside slices of bread.
- Mix shredded chicken with pesto.
- Build layers of sandwich with pesto chicken, onion, and tomato, adding lettuce if desired.
